I disagree. Triggers are useful for enforcing business logic and audit trails.
In this case, I don't think the OP can expect every user to use the OUTPUT clause. If a user forgets (or intentionally), then the audit trail will be worthless.
Of course, it would be best that the users have to use a stored proc to perform the delete, at which point the sky's the limit on how to implement an audit trail. But even then, you must make sure ALL users use the sproc - even admins.
